CHARACTERÍSTICS OF VINEYARDS: Cimal is produced from Garnacha grapes that have been grown in our own vineyards. The soil consists of a mixture of clay and sand with a high concentration of limestone and many small stones. The stones help to retain the moisture in the soil during the long dry summer season. ELABORACION: The grapes are harvested by hand and fermented with indigenous yeast. Cimal is aged 9 months in barrels of American and French oak and 2 months in bottle before its release. AGED: Nine months in barrels of American and French oak.. ALCOHOL 20ºC: 14% Vol. TOTAL ACIDITY: 5,5 gr. / lt. REDUCTOR SUGAR: 4.2 gr. / l. TOTAL SO2: 68 mg/l TASTING NOTES: The quality of the grapes gives us cleanliness and aromatic honesty based on notes of mature blueberries and plums, fleshy, friendly on the journey but not renouncing to a respectful structure and generous final of fruity and spicy, a perfect balance of acidity.
